Brownie Nanaimo Bars


Bottom layer:
1 box (15.5 oz) "Thick 'n Fudgy Deluxe Chocolate Chunk Brownie mix,
	8x8 pan size"
1/4 cup vegetable oil
3 Tbsp water
1 egg
1/2 cup lightly packed coconut

Middle layer:
1/2 cup unsalted butter, softened
3 cups powdered sugar
3 Tbsp vanilla custard powder (*)
5 Tbsp milk

Top layer:
3 Tbsp butter
5 oz unsweetened chocolate
1/3 C walnuts, coarsely chopped

Instructions:
Preheat oven to 325F.  Spray a glass 11x13 pan with nonstick spray.

Combine brownie mix, vegetable oil, water, egg, and coconut in large
bowl.  Stir 50 strokes with spoon.  Spread in greased pan.

Bake at 325F for 25 minutes, or until toothpick comes out cleanly.

Cool brownies completely.

In a medium bowl, combine 1/2 C butter, powdered sugar, custard powder,
and milk.  Using an electric mixer, combine at low speed and then mix
about 30 seconds at high speed until smooth and spreadable.
Spread over cooled brownies into an even layer.

(*) One brand of vanilla custard powder is "Bird's custard style dessert mix".
If unavailable, instant vanilla pudding mix may be substituted.
If pudding mix is used, dissolve the pudding mix in the milk before adding
to the butter and sugar.

Melt 3 Tbsp butter and chocolate in a 2-cup Pyrex measuring cup in
the microwave: microwave at high power for 45 seconds, stir, and repeat
until the chocolate is completely melted.  Pour chocolate mixture on top
of the dessert bar and smooth gently into an even layer with a rubber spatula.

Sprinkle walnuts on top.

Chill dessert.  Cut into squares to serve.  Makes about 24 squares.
