8 Tbsp (1 stick) butter, room temperature 3/4 cup sugar 2 eggs 2 cups flour 1 tsp baking soda 3 large ripe bananas, mashed 1 tsp vanilla Preheat oven to 350F. Grease 9x5x3 bread pan. Cream butter and sugar. Add eggs one at a time. Stir in mixed dry ingredients. Fold in bananas and vanilla. Bake 50-60 minutes, or until inserted toothpick comes out clean.
